Mole de Olla

A classic Mexican beef-and-chile stew with a bright, charred tomato-chile broth, tender  beef shank, corn, and calabacita. Hearty, fragrant, and perfect with warm  tortillas.

Ingredients

  • 2 lb beef shank
  • 8 tomatoes
  • 1 onion for the  soup plus extra chopped onion for topping
  • 3 cloves garlic
  • 1 bunch cilantro plus extra for topping
  • 4 dried guajillo chiles
  • 4 dried puya chiles
  • 1–2 dried árbol chiles, to taste
  • Salt to taste
  • 2 ears corn, each cut into 3 pieces
  • 1 small calabacita mexicana, chopped
  • Water for boiling the beef
  • Warm tortillas for serving
