Potsticker Soup with Mushrooms & Bok Choy

Ingredients

For the Soup Base:
1 tablespoon sesame oil (or vegetable oil)
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
6 cups chicken or vegetable broth
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/2 teaspoon chili flakes (optional, for heat)
Add-Ins:
1 cup mushrooms, sliced (shiitake, button, or cremini work well)
1 small head bok choy, chopped into bite-sized pieces
1 package (10–12 oz) frozen potstickers or dumplings (your favorite variety)
Optional Garnishes:
2 green onions, sliced
Fresh cilantro, chopped
Sesame seeds
Sriracha or chili oil
