Mandarin Lunchbox Salad

Ingredients

For the Salad:

  • 1 (16 oz) bag coleslaw mix (just the veggies, no dressing)

  • 1 large red bell pepper, finely diced

  • 4 mandarin oranges (such as Clementines), peeled and segmented

  • 5 green onions, thinly sliced

  • ½ cup raw cashews, roughly chopped

  • ¼ cup sliced almonds

For the Ginger-Sesame Dressing:

  • ¼ cup olive oil

  • ¼ cup rice vinegar

  • ¼ cup low-sodium soy sauce

  • 1-2 tablespoons honey (adjust to taste)

  • 2 teaspoons sesame oil

  • 1 ½ tablespoons fresh ginger, finely grated

  • 1 teaspoon garlic powder
